White Wine :
Pressed and fermented off the skin, slowly mature for 6 months, before being bottling.

White blush :
Second pressing of the white grapes, fermented with the skin for 24 hours. Skin is taken off and then it’s left to ferment, barreled and matured for a further 9 months before bottling.

Red Wine :
Fermented with the skin for up to 3 weeks, and barreled and matured for a further 12 months before bottling.

Port Wine :
The red grapes, fermented with the skin for up to 6-7 days and fermentation is stopped with the addition of brandy approximately 15% volume, barreled and matured in oak.
